When it comes to the perfect summer salad, don’t look any further, because this is it. It has all the flavors and textures of traditional spring rolls, without the wrapper. In less than half the time of traditional spring rolls, you can make this salad by cutting vegetables with a chef knife whenever you want. It’s also vegan-friendly, gluten-free, and dairy-free, with minimal effort!
In the middle of the bowl is a pair of chopsticks, which are paired with the healthy spring roll salad. Making spring rolls is hard because rolling them is the most challenging part. You’ll still mess up some days no matter how many videos you watch on how to roll a burrito. It never fails that one of my spring rolls ends up a little wonky, no matter how hard I try.
What Is Spring Roll Salad?
Summer is the perfect time to make (and eat) Spring Roll Salad. You’ll love it because it’s light, healthy, and comes with a peanut ginger dressing that’s easy to drink. We have the perfect summer salad for you if you are looking for something light and refreshing. Spring rolls are traditionally made with rice paper, but this dish eliminates it. This recipe eliminates the rolling step and still gives you the delicious flavor spring rolls can offer from a chef knife. You can make it as a quick and healthy meal for your next backyard barbecue or for your next dinner party.
Why This Recipe Is Dietitian Approved
Balanced meal. If you’re craving something light and refreshing, this salad is definitely right for you. Use a chef knife set to cut vegetables for salads. This dish is protein-rich, carb-rich, fiber-rich, and fat-rich.
Colorful. Gut health can be supported by eating a variety of colorful vegetables cut with chef knife.
Meal prep friendly. With a sturdy base, this salad is much better for meal prepping than a salad with a lettuce base.
What Ingredients Are Preferred To Make This Recipe
Rice Noodles
Noodles with a thin surface, such as vermicelli or stick rice noodles, appeal to me. Rice noodles should be cooked according to package instructions as every brand is different. In most recipes, the noodles are boiled for about five minutes in a large bowl.
Cabbage
You can add fiber, micronutrients, and color to your diet with this budget-friendly staple.
Romaine Lettuce
It’s fresh and crunchy! There are also great options such as endive leaves and green cabbage, just look for a leafy green that provides enough crunch.
Fresh Vegetables
The cucumbers and carrots that I used are also found in regular spring rolls.
Fresh Herbs
Freshness and flavor are added by cilantro and mint leaves. If you have access to both herbs, I highly recommend using them.
Bean Sprouts
When adding bean sprouts to meals, always wash them first. As an additional food safety precaution, you can microwave them as well.
Green Onions
A combination of whites and greens is used in this recipe.
Chopped Peanuts
A nutty crunch is just what I’m looking for!
What Ingredients are Used For Garnishing The Salad?
Soy Sauce:
To reduce the sodium content of this recipe, I typically use low sodium soy sauce.
Rice Vinegar:
There should be a little acidity in it. A fresh salad like this is made even better by the vinegar breaking up the creaminess of the peanut butter.
Sesame Oil:
The flavor of toast is subtle. Alternatively, you can use olive oil or avocado oil if you need to (but sesame oil is best).
Ginger And Garlic:
It is delicious to combine these aromatics with peanut dressing. The best way to ensure freshness is to buy it right away.
Peanut Butter:
My preference is to use natural peanut butter whenever possible. To do this, look for peanut butter made with only one ingredient: peanuts. (Some peanut butters may also contain salt, and that’s fine).
Honey:
Sweeten your day with natural sugars! With the salty soy sauce and the creamy peanut butter, the honey pairs perfectly.
Sriracha:
Add some spice to the dressing with this optional ingredient.
Lime Juice:
Fresh lime juice is always preferred over pre-squeezed for maximum flavor and freshness.
Can You Make This In Advance?
Prepare some healthy meals by following these steps. As soon as all your ingredients have been prepped, start assembling. The cabbage should be shredded, the mini cucumbers should be thinly cut into strings, the carrots should be cut or bought as matchsticks, and the red bell pepper should be sliced. All the vegetables should be stored in the refrigerator until they are needed and then cut with the best chef knife.
Using 1-2 teaspoons of sesame oil, toss the rice noodles with 1-2 teaspoons of water after cooking them according to the package directions. The peanut dressing should be kept in a sealed container in the refrigerator. Try adding some sriracha or red pepper flakes to your dressing if you love a spicy peanut sauce. Make sure the shrimp are ready to cook. The shrimp we are using here are already cooked, so make sure to defrost and drain them ahead of time. Generally, I don’t keep shrimp longer than 3 days in the refrigerator.
Do Fresh Salad Spring Rolls Go Well With Any Sauce?
Spring roll dipping sauces come in so many varieties. The most traditional sauce is peanut sauce. Using peanut butter, soy sauce, lime juice, honey, and red curry paste, this is what I included in the recipe. There’s something sweet, savory, spicy, and totally addictive about it. Equal parts rice wine vinegar and soy sauce (or tamari) should be combined. When you like things spicy, add a pinch of chili flakes, a pinch of sesame oil, and a minced garlic clove.
A sweeter sauce can also be made by adding a touch of sugar. There are almost no dishes that do not use fish sauce. You can add a teaspoon of Sriracha, three tablespoons of fish sauce, three tablespoons of water, lime juice, two tablespoons brown sugar, and a teaspoon of fresh ginger to this recipe. There are also sweet chili sauces, sesame ginger dressing, chicken satay sauces, hoisin sauces, duck sauces, thick teriyaki sauces, and Sriracha straight up.
